Jill is delighted to be working with Katey and Nathan at The Herb Garden to bring you a series of four workshops that will introduce you to four seasons of herbal wisdom.
The Herb Garden is a place of sanctuary with beautiful old world barns and charm. Katey has created a labyrinth on the grounds which you are welcome to walk.

June Workshop: Spring Herbal Tonics
Sunday, June 23rd 2019 | 2pm-4:30pm
We’ll take a walk where you will learn to identify several common hedgerow plants used as nutritious spring tonic foods and herbal remedies
You’ll learn which parts of the plant are useful and how to harvest and prepare them.
This class will introduce you to making your own foods and herbal remedies from plants commonly available in local hedgerows.
You’ll taste nettle soup, dandelion and plantain salad and enjoy a spring infusion.
July Workshop: Flowers of Summer
Sunday, July 21st 2019 | 2pm-4:30pm
We’ll take a walk and identify some common hedgerow flowers and early fruits that can be used as foods and as herbal remedies.
You will learn how to make macerated oils for your medicine cabinet as well as deliciously infused honeys.
You will learn how to make the most of adding herbs to your food for health.
We’ll share a refreshing iced summer infusion.
August Workshop: Fall Roots and Berries
Sunday, August 25th | 2-4:30pm
We’ll take a walk and identify some common roots and berries
You will learn about harvesting and storing plants for the winter.
We’ll talk about how to make syrups from berries such as rosehips, elderberry and sumac.
You'll learn about preparing and decocting common roots, such as dandelion and burdock.
We’ll share a delicious hibiscus, rosehip and ginger tea blend.
September Workshop: Your Winter Medicine Cabinet
Sunday, September 22nd 2019 | 2-4:30pm
We’ll take a walk and explore which hedgerow plants are still around
Preparing your own winter medicine cabinet.
Principles of health, healing and wellbeing through the winter months.
You’ll learn how to increase immunity, vitality and vibrancy with foods and plants, such as wild mushrooms and astragalus.
You’ll learn how to use warming and stimulating plants (ginger, fennel, cinnamon, cardamom, cloves and other spices) in your food and as remedies for common winter ailments and wellbeing.
You’ll learn how to make your own fire cider vinegar.
We’ll sip on a warming homemade chai spice.
